I had the absolute pleasure to sit down with Geoff Grimmer of Zealous Schools in downtown Eagle to discuss the way he's shaking up the "learning landscape". Zealous Schools is an independent MicroSchool teaching 6th-8th graders. Their mission is simple: to develop healthy citizens, critical thinkers and zealous learners.

You guys! I recently had the pleasure of visiting Buttercrunch Farm in Eagle to check out their beautiful produce grown through the system of Aquaponics. This innovative farming technique uses about 90% less water than traditional agricultural farms and they can produce the same amount of product in 3,000 square feet as others can in 4 acres! Can you believe that?

Aquaponics is a growing technique where both fish and plants are grown together in the same system. The waste from the fish is what fertilizes the plants and the plants in turn clean the water that gets returned to the fish.

Peri and Rob are growing some of the most picture-perfect organic lettuce and micro-greens that I’ve ever seen. They also sell farm fresh, organic eggs that from their chickens that are fed a diet free of corn and soy. I’m not kidding when I say that these are the best eggs I’ve ever tasted! Some of the best restaurants throughout the Vail Valley feature their local produce and the farmstead is only open to the public on select weekend days from 12-4pm.
